Ryder’s Lemon Drizzle Cake – Bang and Burn by Lindsey Nicole

Hi guys! I’ve been wanting to start this series for SUCH a long time so I’m so excited to share this with you. This is a recipe series because I love to bake, particularly for my family members who benefit from taste testing my batter. 

Ryder is a character from Bang and Burn, an FBI mystery book written by Lindsey Nicole. As soon as I tasted this cake, it gave me major Ryder vibes. As a character, Ryder is a sunshine golden-retriever. Despite the hardships that Ryder and his partner, Elara, had to endure throughout the book, he constantly kept a positive mindset and just gave me all of the best summery, happy vibes. 

This specific recipe is one I’ve been working on for a while and have perfected over the years. It takes a lot of time to figure out how much lemon is too much lemon in a lemon drizzle cake, but I’ve finally cracked the code. 

Ingredients:

• 1.8 cups of all-purpose flour
• ¾ of a cup of caster sugar
• ⅔ of a cup of caster sugar (for the drizzle)
• ½ cup of unsalted butter
• 3 large eggs
• 2 tablespoons of 2% milk (or your milk of choice)
• Zest and juice of 2 lemons
• 1 teaspoon of baking powder

Steps:

1. Grease a round cake tin (I use a 19 x 7 cm tin) and pre-heat the oven to 350 degrees F
2. Beat the butter and sugar together using a mixer or whisking until creamy
3. Add the eggs one by one and mix well after each egg is added
4. Add in the flour, baking powder, milk, and lemon zest
5. Mix until smooth and creamy
6. Spread batter evenly into greased cake tin
7. Bake for 35-40 minutes or until the cake is golden (pro tip: insert a toothpick and if it comes out clean, it’s done!)
8. Mix lemon juice with sugar set aside for the drizzle
9. Remove cake from the tin once out of the oven
10. Pour drizzle syrup over the cake and leave to cool completely before serving
